Managed to get my Windows laptop running the config tool to talk to my remote Linux (Centos 7) server over OpenVPN, and not break my internet access!
Was quite a journey for a networking novice, but if anyone who knows less than I do about networking wants to know how I did it, I'm in the process of writing it up so I don't forget. Happy to post it somewhere or just email it.
