As far as I know most information about Derby you can find is on the Apache Derby web site http://db.apache.org/derby/
From there you can dowload a tool called ij that accepts SQL commands to view data outside Aware IM (we can email this tool to you along with the appropriate batch files to start it if you like). There is no GUI tool that I am aware of.
You can find all the documentation about Derby on the Apache site in the Manuals tab. It is really simple to back it up - all you have to do is back up the entire DATA directory where it stores its files. Similarly to restore it just restore this directory.
