I have tried the Protect and Read Protect actions but they cant get down to the level of the attribute values. Seems they protect attributes only.

I´m not sure what type of checkbox you are refering to? Is it a "Yes/No" attribute or a "Plain text" attribute with the checkbox activated in queries (each row)?
If it is a "Yes/No" attribute, you can use the protection rules to achieve what you´re after. Here are a couple of example rules for your scenario and you would have to make these rules form dynamic i.e. the rules has to fire dynamically on the form. You would also have to set the "Yes/No" attributes so they save when a value is changed:
If BO.Mountaineering WAS CHANGED TO "Yes" Then
BO.None='No'
If BO.None='No'
PROTECT BO.None FROM ALL Except System
The problem if you will with this solution is that you would not be able to select the BO.None flag if it´s set to 'No' (you would have to for example change it back to 'Yes' via rules if all other checkboxes are set to 'No' etc., you get the idea).
