We are noticing a lot of errors and interesting other items in here (Setting>Logging>Log To Console) when we view it. But unfortunately we can't read them because they fly past so fast in the console screen... is there a way to have these write to a file so we can view them?

(It is actually really important we do this as I suspect there are clues to errors that we need to fix)

There are options to send logging to a file in the Aware IM Control Panel. If you are not using the Control Panel you can set these options in the file AwareIM/bin/logger.props (Aware IM uses a very well known package called log4j and the logger.props file is just settings for this package - check it out for details how to set its properties)
