You could write a custom java plugin that would generate thumbnail versions of the uploaded image.
A quick workaround would be to create a thumbnail image attribute and have the user upload two versions. (Assuming that they know how to resample the original image). Also, I generally put a comment that uploaded images should be of a maximum size and resolution just in case anyone happens to read it and pay attention.
